  • 1/2 cup unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prep the apples: Peel, core, and slice apples into 1/4-inch thick slices. Toss in a large bowl with granulated sugar, lemon juice, cinnamon, nutmeg, and flour until coated. Set aside.
  3. Make the salted caramel: In a medium saucepan over medium heat, melt the butter. Add brown sugar and whisk constantly until dissolved and bubbling, about 2-3 minutes. Slowly pour in heavy cream while whisking (it will bubble up). Cook for 1 minute, then remove from heat and stir in vanilla and sea salt. Taste and adjust salt if desired.
  4. Make the streusel: In a separate bowl, combine oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes. Use a pastry cutter, two forks, or your fingers to work butter into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter pieces remaining. Do not overmix.
  5. Assemble the crisp: Spread apple mixture evenly in a 9×13-inch baking dish. Pour salted caramel over the top without stirring. Sprinkle streusel evenly over the apples.
  6. Bake: Place dish on a baking sheet. Bake for 40-45 minutes, until streusel is golden brown and filling is bubbling around edges. If streusel browns too quickly, tent loosely with foil for the last 10 minutes.
  7. Cool and serve: Let crisp rest for at least 15 minutes before serving. Serve warm with vanilla ice cream or a drizzle of heavy cream.
