  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2–3 carrots, peeled and sliced
  • 2–3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 can (16.3 oz) refrigerated buttermilk biscuits
  • ½ cup frozen peas
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Sear the chicken: Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper. Sear for 2-3 minutes per side until golden brown.
  2. Layer the veggies: Place diced onion, carrots, and celery in the bottom of a 6-quart slow cooker.
  3. Add chicken and aromatics: Place seared chicken on top of veggies. Sprinkle garlic, thyme, parsley, and black pepper. Pour in chicken broth and cream of chicken soup. Stir gently.
  4. Cook low and slow: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until chicken shreds easily.
  5. Shred the chicken: Remove chicken, shred with two forks, and return to pot. Stir in frozen peas.
  6. Add dumplings: Cut each biscuit into quarters. Gently drop into hot broth, pushing down slightly.
  7. Cook dumplings: Cover and cook on HIGH for 30-40 minutes until dumplings are cooked through and fluffy.
  8. Finish and serve: Taste and adjust salt/pepper. Ladle into bowls, garnish with fresh parsley, and serve hot.

Notes

For a gluten-free version, use gluten-free cream of chicken soup and gluten-free biscuit dough. For dairy-free, use dairy-free cream soup and dairy-free biscuit dough. If broth is too thin after adding dumplings, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in; cook 5 more minutes.
