Ingredients

Scale
  • 6 medium apples (about 2 pounds or 900g), peeled and sliced into ¼-inch pieces (mix of Granny Smith and Honeycrisp recommended)
  • ¼ cup (50g) granulated sugar
  • ¼ cup (50g) light brown sugar, packed
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons all-purpose flour
  • 1 cup (120g) old-fashioned rolled oats
  • ¾ cup (90g) all-purpose flour
  • ½ cup (100g) light brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, melted and slightly cooled
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your apples: peel, core, and slice into roughly ¼-inch thick pieces. Toss into a large mixing bowl.
  3. Make the filling: to the bowl of apples, add granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, salt, and flour. Toss until every apple slice is coated. Let sit while you make the streusel.
  4. Make the oat streusel: in a medium bowl, combine rolled oats, flour, both sugars, cinnamon, and salt. Stir with a fork. Pour in melted butter and vanilla, then mix until moistened and crumbly.
  5. Assemble the crisp: pour the apple mixture into a 9×13-inch baking dish and spread evenly. Sprinkle the streusel evenly over the top, covering all visible fruit.
  6. Bake on the middle rack for 40-45 minutes, or until the filling is bubbling around the edges and the topping is golden brown. If the streusel browns too quickly, loosely tent with foil.
  7. Cool for 10-15 minutes before serving to allow the juices to thicken.

Notes

For a crunchier topping, toast the rolled oats in a 350°F oven for 5-7 minutes before mixing into the streusel. Let the crisp rest for 10-15 minutes after baking to allow the juices to thicken. If using salted butter, reduce the added salt in the streusel to a pinch.
