This creamy honeynut squash soup is a quick and easy 30-minute meal that’s perfect for busy weeknights. Roasted honeynut squash is blended with coconut milk and warm spices for a silky, comforting soup that’s naturally gluten-free and can be made vegan.

  • 2 medium honeynut squash (about 1.5 pounds total)
  • 1 large yellow onion, diced
  • 34 garlic cloves, minced
  • 2 tablespoons unsalted butter
  • 3 cups vegetable broth, low-sodium
  • 1 cup full-fat coconut milk (from a can)
  • 1 teaspoon fine sea salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg, freshly grated if possible
  • Optional garnish: toasted pumpkin seeds, coconut milk or heavy cream drizzle, fresh thyme or sage leaves, red pepper flakes

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Wash the honeynut squash, cut them in half lengthwise, and scoop out the seeds with a spoon.
  3. Place the squash halves cut-side down on the prepared baking sheet. Roast for 25-30 minutes until the flesh is very soft and a fork slides in easily. Let cool for 5 minutes.
  4. While the squash roasts, melt the butter in a large soup pot over medium heat. Add the diced onion and cook for 5-6 minutes until soft and translucent. Add the minced garlic and cook for 1 minute until fragrant.
  5. Once the squash is cool enough to handle, scoop the flesh from the skin and add it to the pot with the onion mixture.
  6. Pour in the vegetable broth, salt, pepper, cinnamon, and nutmeg. Stir and bring to a gentle simmer over medium-high heat. Reduce heat to medium-low and cook for 5 minutes, stirring occasionally.
  7. Remove the pot from heat. Use an immersion blender to puree the soup until completely smooth. If using a regular blender, let the soup cool for 10 minutes first, then blend in batches.
  8. Stir in the full-fat coconut milk. Return the pot to medium-low heat and warm through for 2-3 minutes. Taste and adjust seasoning as needed.
  9. Ladle the soup into bowls and garnish with your favorite toppings. Serve hot.

Roast the squash cut-side down to keep it moist. Don’t skip the cinnamon and nutmeg—they enhance the squash’s natural sweetness. Use full-fat coconut milk for the best creamy texture. Always taste and adjust seasoning at the end. Blend first, then add coconut milk to prevent separation. The soup tastes even better the next day.
