  • 2 whole heads of garlic
  • 2 tablespoons olive oil
  • Pinch of salt
  • 3 pounds Russet potatoes, peeled and cut into 2-inch chunks
  • 1/2 cup unsalted butter (1 stick), softened and cut into cubes
  • 3/4 cup whole milk, warmed
  • 4 ounces cream cheese, softened
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh chives or parsley, chopped (for garnish)

Instructions

  1. Roast the Garlic: Preheat oven to 400°F (200°C). Cut the top off each head of garlic to expose the cloves. Place each head on a piece of aluminum foil, drizzle with 1 tablespoon olive oil, and sprinkle with a pinch of salt. Wrap foil tightly around each head. Roast for 40-45 minutes until cloves are soft and golden brown. Let cool, then squeeze out the roasted cloves and mash with a fork. Set aside.
  2. Boil the Potatoes: Place peeled and cut potatoes in a large pot. Cover with cold water by about 1 inch. Add a generous tablespoon of salt. Bring to a boil over high heat, then reduce to medium and simmer for 15-20 minutes until potatoes are fork-tender.
  3. Drain and Dry: Drain potatoes in a colander. Return them to the hot pot and let sit over low heat for about a minute, shaking occasionally, to steam off excess moisture.
  4. Mash and Mix: Remove pot from heat. Add softened butter and roasted garlic paste. Mash with a potato masher or ricer until butter is mostly melted and incorporated.
  5. Add the Creamy Goodness: Add softened cream cheese and about half of the warm milk. Continue mashing and stirring until combined. Add remaining milk a little at a time until desired consistency is reached. Season with salt and pepper. Taste and adjust seasoning.
  6. Finish and Serve: Give a final gentle stir with a wooden spoon. Transfer to a serving bowl, garnish with fresh chives or parsley, and serve immediately.

Notes

For the creamiest texture, use a ricer and avoid over-mixing. Warm the milk before adding to keep potatoes hot. Roast garlic up to 3 days in advance. To reheat leftovers, add a splash of milk and warm gently on the stovetop or in the oven.
