  • 3 pounds Yukon Gold potatoes, peeled and diced into 1-inch cubes
  • 4 cups low-sodium chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 1 cup heavy cream
  • ½ cup sour cream
  • 2 tablespoons unsalted butter
  • ¼ cup fresh chives, chopped
  • ½ cup shredded cheddar cheese (optional)
  • Extra bacon crumbles for topping

Instructions

  1. Cook the bacon: In a large skillet over medium heat, cook the chopped bacon until crispy, about 6-8 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate. Leave about 2 tablespoons of the bacon fat in the skillet.
  2. Sauté the aromatics: Add the diced onion to the skillet with the bacon fat. Cook for 4-5 minutes until softened and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Layer the slow cooker: Place the diced potatoes in the bottom of your slow cooker. Top with the cooked onion and garlic mixture. Pour in the chicken broth, then add the salt, pepper, and dried thyme. Give everything a gentle stir.
  4. Slow cook: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours. The potatoes should be fork-tender.
  5. Mash the potatoes: Once the potatoes are tender, use a potato masher to mash them right in the slow cooker. Mash to your desired consistency.
  6. Add the creamy elements: In a small bowl, whisk together the heavy cream and sour cream. Slowly stir this mixture into the soup. Add the butter and stir until melted.
  7. Season and finish: Taste the soup and adjust salt and pepper as needed. Stir in half of the cooked bacon, reserving the rest for garnish. Let the soup heat through for another 5-10 minutes on LOW.
  8. Serve: Ladle the soup into bowls. Top with the reserved bacon, fresh chives, and a sprinkle of cheddar cheese if using. Serve hot.

Notes

Add the cream at the very end to prevent curdling. For a thicker soup, mash more potatoes or stir in a cornstarch slurry. Yukon Gold potatoes are recommended for their creamy texture.
