This creamy Tuscan chicken skillet is a quick and easy 30-minute dinner featuring tender chicken in a velvety sauce with sun-dried tomatoes, spinach, and Parmesan. Perfect for busy weeknights or impressing guests.

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts (about 1.5 lbs total), sliced in half horizontally
  • ½ cup sun-dried tomatoes packed in oil, drained and roughly chopped (reserve 2 tablespoons oil)
  • 1 cup heavy cream
  • 3 cups packed fresh spinach
  • 4 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • ½ cup low-sodium chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Optional garnish: fresh basil or parsley, chopped

Instructions

  1. Prep the chicken: Place chicken breasts on a cutting board and slice each in half horizontally to create thin cutlets. Season both sides generously with salt, pepper, and Italian seasoning.
  2. Get the pan ready: Place a large skillet over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon reserved oil from the sun-dried tomatoes. Heat until shimmering.
  3. Sear the chicken: Place seasoned chicken cutlets in the hot skillet in a single layer (work in batches if needed). Cook undisturbed for 4-5 minutes until golden brown, then flip and cook for another 3-4 minutes until cooked through (165°F internal temperature). Transfer to a plate and tent with foil.
  4. Sauté the aromatics: Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the same skillet. Stir constantly for about 30 seconds until fragrant.
  5. Deglaze the pan: Pour in chicken broth and use a wooden spoon to scrape up browned bits from the bottom. Let simmer for about 1 minute.
  6. Build the cream sauce: Reduce heat to low. Pour in heavy cream, stirring constantly. Let come to a gentle simmer. Stir in freshly grated Parmesan until melted. Taste and adjust salt and pepper.
  7. Wilt the spinach: Add fresh spinach in handfuls, stirring gently until wilted, about 2 minutes.
  8. Return the chicken: Nestle cooked chicken cutlets back into the skillet, spooning sauce over the top. Simmer on low for 2-3 minutes to meld flavors. If sauce is too thick, add a splash of broth or water.
  9. Finish and serve: Turn off heat. Garnish with fresh basil or parsley if desired. Serve immediately over pasta, rice, or with crusty bread.

Notes

For best results, use sun-dried tomatoes packed in oil and freshly grated Parmesan. Keep heat on low when adding cream to prevent curdling. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
