  • 1 tablespoon coconut oil or avocado oil (melted)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • Optional: ¼ teaspoon vanilla extract

Instructions

  1. Preheat your air fryer to 320°F (160°C).
  2. Rinse and dry the pumpkin seeds thoroughly if using fresh seeds.
  3. In a medium mixing bowl, combine the pumpkin seeds, melted coconut oil, sugar, cinnamon, and salt. Stir well until every seed is coated.
  4. If using vanilla extract, add it now and stir again.
  5. Spread the seeds in a single layer in the air fryer basket. Do not overcrowd.
  6. Air fry at 320°F (160°C) for 5 minutes.
  7. Open the basket and stir the seeds with a spatula.
  8. Air fry for another 3-5 minutes, until golden brown and fragrant.
  9. Remove the basket and let the seeds cool in the basket for 2 minutes.
  10. Transfer to a bowl or plate and serve warm or at room temperature.

Don’t skip drying the seeds thoroughly; wet seeds will steam instead of crisp. Watch the temperature—320°F is ideal to avoid burning the sugar. Stir halfway through for even cooking. Let seeds cool completely before storing to maintain crispiness.
