Ingredients

Scale
  • 1 ½ pounds salmon fillet, skin removed and cut into 1-inch cubes
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon avocado oil
  • 3 tablespoons honey
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 clove garlic, minced
  • ½ teaspoon sesame oil (optional)
  • 2 tablespoons green onions, sliced thinly (for garnish)
  • 1 tablespoon sesame seeds, toasted (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Pat the salmon fillet completely dry with paper towels. Cut into uniform 1-inch cubes.
  2. In a medium bowl, whisk together cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper. Add salmon cubes and toss gently until evenly coated.
  3. Preheat air fryer to 400°F (200°C) for 3-5 minutes. Drizzle avocado oil over coated salmon bites and toss again.
  4. Arrange salmon bites in a single layer in the air fryer basket, ensuring they are not touching. Cook in batches if necessary.
  5. Air fry at 400°F for 6 minutes. Do not open the basket during this time.
  6. Flip each piece using tongs. Air fry for another 4-6 minutes until golden brown and crispy. Internal temperature should reach 145°F (63°C) or 135-140°F for a more tender center.
  7. While salmon cooks, make the glaze: In a small saucepan over medium heat, combine honey, sriracha, soy sauce, rice vinegar, minced garlic, and sesame oil. Whisk and bring to a gentle simmer. Cook for 2-3 minutes until thickened slightly. Alternatively, microwave in 20-second intervals.
  8. Transfer cooked salmon to a large bowl. Pour warm glaze over the top and toss gently to coat each piece.
  9. Transfer to a serving platter, sprinkle with sliced green onions and toasted sesame seeds. Serve with lime wedges.

Notes

Pat salmon very dry for maximum crispiness. Do not skip the cornstarch—it creates the crispy exterior. Apply glaze just before serving to keep the crust crunchy. For best results, cook in batches if air fryer is small.
