Golden, shatteringly crisp skin with tender, juicy meat and a garlic butter sauce that pools in every crevice. This recipe recreates the magic of a beloved French bistro dish with simple ingredients and high heat.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional, for color)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Pat chicken thighs dry with paper towels. This is crucial for crispy skin.
  3. In a small bowl, mix softened butter, minced garlic, salt, pepper, and paprika until well combined.
  4. Rub the garlic butter mixture all over the chicken thighs, especially under the skin for maximum flavor.
  5. Place chicken thighs skin-side up on the prepared baking sheet, spacing them apart.
  6. Bake for 35-40 minutes, or until the skin is deep golden brown and crispy, and the internal temperature reaches 165°F (74°C).
  7. Let rest for 5 minutes before serving. Garnish with fresh parsley and drizzle any pan juices over the top.

Notes

For extra crispy skin, pat the chicken thighs very dry before applying the butter. You can also let them sit uncovered in the fridge for an hour to dry out the skin further. The garlic butter can be made ahead and stored in the fridge.
