These crispy brown butter Brussels sprouts with bacon are a quick and easy side dish that comes together in under 30 minutes. The nutty brown butter, salty bacon, and caramelized edges make this a crowd-pleaser that even Brussels sprout skeptics will love.

Ingredients

Scale
  • 1 pound (450g) Brussels sprouts, trimmed and halved
  • 4 slices (about 120g) bacon, chopped
  • 3 tablespoons (42g) unsalted butter
  • 3 garlic cloves, minced
  • 1 tablespoon (15ml) maple syrup
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: lemon zest or fresh lemon juice for garnish

Instructions

  1. Prep the Brussels sprouts: Rinse the sprouts under cold water and pat them completely dry. Trim the tough stem end and remove any yellow or damaged outer leaves. Cut each sprout in half lengthwise through the stem. Quarter any large ones for even cooking.
  2. Cook the bacon: Place a large cast iron skillet over medium heat. Add the chopped bacon and cook, stirring occasionally, until crispy and the fat has rendered, about 6-8 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the rendered fat in the pan.
  3. Brown the butter: Add the 3 tablespoons of butter to the hot pan with the bacon fat. Swirl as it melts. The butter will foam, then turn golden. Watch carefully for a deep amber color and nutty aroma, then immediately add the Brussels sprouts.
  4. Sear the sprouts: Arrange the sprouts cut-side down in a single layer. Do not overcrowd the pan; work in batches if needed. Cook undisturbed for 3-4 minutes, then stir and cook for another 1-2 minutes.
  5. Add garlic and seasonings: Push the sprouts to one side of the pan. Add the minced garlic to the empty space and cook for about 30 seconds until fragrant. Stir everything together. Sprinkle with salt, pepper, and red pepper flakes. Drizzle the maple syrup over the top and stir to coat.
  6. Finish cooking: Continue cooking for another 3-4 minutes, stirring occasionally, until the sprouts are tender on the inside and crispy on the outside. Test doneness by piercing a sprout with a fork—it should go in easily but still have some resistance.
  7. Combine and serve: Return the crispy bacon to the pan and toss everything together. Taste and adjust seasoning if needed. If using lemon, squeeze a little over the top right before serving.

Notes

For the best texture, ensure Brussels sprouts are thoroughly dried before cooking. If sprouts are browning too fast but aren’t cooked through, add a tablespoon of water to the pan and cover with a lid for 1-2 minutes. The flavors deepen overnight, making leftovers great for salads.
