  • 1 pound ground beef (80/20)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • 4 cups low-sodium chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • 8 ounces lasagna noodles, broken into pieces
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese (for topping)
  • Fresh basil or parsley, chopped (for topping)
  • Extra Parmesan for serving

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the ground beef and brown for 5-6 minutes, breaking it up with a wooden spoon. Do not drain the fat.
  2. Add the diced onion and cook for 3-4 minutes until softened and translucent. Scrape up any browned bits from the bottom.
  3. Stir in the minced garlic, oregano, red pepper flakes, salt, and pepper. Cook for 30-60 seconds until fragrant.
  4. Add the tomato paste and cook for 2 minutes, stirring constantly, until the color darkens.
  5. Pour in the chicken broth, crushed tomatoes, diced tomatoes (with juices), and sugar. Stir and bring to a boil, about 3-4 minutes.
  6. Reduce heat to a simmer, add the broken lasagna noodles, and stir to submerge. Cover and simmer for 12-15 minutes, stirring occasionally, until noodles are al dente.
  7. Remove from heat and stir in the heavy cream until the soup turns creamy orange. Add the Parmesan cheese and stir until fully melted.
  8. Taste and adjust seasoning with additional salt and pepper if needed. Let the soup rest for 5 minutes before serving.
  9. Serve hot, topped with shredded mozzarella, fresh basil or parsley, and extra Parmesan.

Notes

For best results, use room temperature cream to prevent curdling. Undercook noodles by 2-3 minutes if planning leftovers. The soup thickens as it sits; add broth when reheating. Can be made ahead and refrigerated for up to 4 days. Freezes well but cook noodles separately for best texture.
