These adorable Frankenstein Guacamole Bites are the perfect Halloween party appetizer. Creamy, chunky guacamole is piled onto sturdy tortilla chips and decorated with olive eyes, sour cream stitches, and carrot bolts for a fun and delicious treat that will impress your guests.

  • 4 ripe avocados (Hass recommended)
  • 1 medium lime, juiced (about 2 tablespoons)
  • 1/2 cup finely diced red onion
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon kosher salt (plus more to taste)
  • 1/4 teaspoon black pepper (freshly ground)
  • 1 medium Roma tomato, seeded and diced (optional)
  • 24 round tortilla chips (such as Tostitos Scoops)
  • 12 black olives, sliced into rounds
  • 1/4 cup sour cream (full fat)
  • 1 small carrot, cut into thin matchsticks
  • Fresh cilantro leaves (for garnish)

Instructions

  1. Prep your ingredients: Juice the lime into a small bowl. Finely dice the red onion and add it to the lime juice. Let sit for 5 minutes. Meanwhile, seed and mince the jalapeño, chop the cilantro, and dice the tomato (if using). Set aside.
  2. Prepare the avocados: Cut each avocado in half, remove the pit, and scoop the flesh into a large mixing bowl. Mash 2 of the avocados completely with a fork until smooth. Roughly chop the remaining 2 avocados into small chunks and add to the bowl.
  3. Mix the guacamole: Pour the lime juice and onion mixture over the avocado. Add the minced jalapeño, chopped cilantro, salt, pepper, and diced tomato (if using). Stir gently with a fork until combined. Taste and adjust seasoning as needed. Cover with plastic wrap pressed directly onto the surface and set aside.
  4. Assemble the Frankenstein faces: Lay out 12 tortilla chips on a work surface. Place a generous dollop (about 2 tablespoons) of guacamole on each chip. Press two black olive slices into each mound for the eyes, placing them slightly closer together. Use a toothpick to draw a zigzag or straight line for the mouth.
  5. Add the stitches and bolts: Fill a small piping bag or zip-top bag with sour cream. Snip off a tiny corner. Pipe two small dots above the eyes for stitches and a line across the forehead. Stick two carrot matchsticks into the sides of the guacamole mound for bolts, angled slightly upward. Add a tiny dot of sour cream at the base of each carrot.
  6. Add the hair: Gently press two small cilantro leaves into the top of the guacamole for hair.
  7. Repeat and arrange: Repeat the process for the remaining 11 chips. Arrange the finished bites on a serving platter in neat rows.

Notes

For best results, use ripe but firm avocados. Let the diced onion sit in lime juice for 5 minutes to mellow the flavor. Assemble the bites no more than 30 minutes before serving to prevent soggy chips. Use full-fat sour cream for piping. If making ahead, prepare the guacamole base up to 4 hours in advance and store with plastic wrap pressed onto the surface.
