Instructions

  1. If using fresh pumpkin seeds, separate them from the stringy pulp, rinse in a colander under cold water, and pick out any large pieces of pumpkin flesh. If using store-bought raw pepitas, skip this step.
  2. Dry the seeds thoroughly by spreading them on a clean kitchen towel or paper towels and patting them dry. Let them sit for a few minutes to air dry completely.
  3. In a medium mixing bowl, combine the dried pumpkin seeds, olive oil, and salt. Toss well until every seed is coated. Add any optional seasonings if desired and toss again.
