A simple yet elegant turkey breast recipe featuring nutty brown butter and crispy sage, perfect for a romantic dinner or small gathering. Ready in under an hour with minimal ingredients.

Ingredients

Scale
  • 1 boneless, skin-on turkey breast (about 1.5 to 2 pounds)
  • 4 tablespoons unsalted butter
  • 10 to 12 fresh sage leaves
  • 3 cloves garlic, smashed
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper, freshly ground
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center. While the oven heats, take the turkey breast out of the fridge and let it sit at room temperature for about 15 minutes.
  2. Pat the turkey breast dry with paper towels. Season generously on all sides with the kosher salt and black pepper.
  3. In a small saucepan over medium heat, add the 4 tablespoons of unsalted butter. Let it melt, then swirl the pan occasionally. After about 3 to 4 minutes, the butter will start to foam. Watch closely until it turns a deep amber color with little brown specks at the bottom and smells nutty. Immediately remove from heat.
  4. While the butter is still hot, drop in the fresh sage leaves. They’ll sizzle and crisp up in about 30 seconds. Use tongs to transfer them to a paper towel-lined plate. Set aside for garnish.
  5. Heat the olive oil in your oven-safe skillet over medium-high heat until it shimmers. Carefully place the turkey breast skin-side down in the hot pan. Sear without moving for 4 to 5 minutes, until the skin is deep golden brown and crispy. Flip and sear the other side for 2 minutes.
  6. Pour the brown butter from the saucepan over the turkey breast, then add the smashed garlic cloves to the skillet. Let everything sizzle together for about 30 seconds, spooning some of the butter over the turkey.
  7. Place the skillet in the preheated oven, uncovered. Roast for 20 to 25 minutes, until the internal temperature reaches 160°F to 165°F (71°C to 74°C) in the thickest part.
  8. Remove the skillet from the oven and transfer the turkey breast to a cutting board. Tent loosely with aluminum foil and let it rest for 10 minutes. Pour the pan juices into a small bowl and set aside.
  9. Slice the turkey against the grain into ½-inch thick pieces. Arrange on a serving platter, drizzle with the reserved pan juices, and garnish with the crispy sage leaves. Serve immediately.

Notes

Pat the turkey dry twice for crispy skin. Use an instant-read thermometer to avoid overcooking. Let the turkey rest for 10 minutes before slicing. The brown butter can be made up to 2 days ahead and stored in the fridge.
