Instructions

  1. Prepare your popcorn. Pop your popcorn according to the package directions or using your preferred method. You want about 8 cups of popped popcorn. Spread it out on the prepared baking sheet and pick out any unpopped kernels. Let it cool completely—warm popcorn will melt the chocolate and make everything sticky. This takes about 10 minutes. While it cools, get your other ingredients ready.
  2. Line your baking sheet. Line your large rimmed baking sheet with parchment paper or a silicone baking mat. Make sure the paper extends up the sides a little to catch any stray chocolate. Set this aside for now.
  3. Melt the white chocolate. Place the white chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each interval. White chocolate can burn easily, so do not walk away. After about 1 minute and 30 seconds to 2 minutes, it should be mostly melted. Stir until completely smooth.   4. Combine popcorn and chocolate. Place the cooled popcorn in your large mixing bowl. Pour the melted white chocolate over the popcorn. It is okay if some pieces are not fully covered—that is part of the rustic charm.
  5. Add the mix-ins. Sprinkle in the candy corn and peanuts (if using). Fold gently once or twice to distribute them evenly. Do not overmix, or the candy corn will start to melt and bleed color into the white chocolate. A few gentle folds are all you need.
  6. Spread the mixture. Dump the coated popcorn mixture onto your prepared baking sheet. Using your spatula or clean hands, spread it into an even layer about 1/2 to 3/4 inch thick. Press down gently to compact it slightly—this helps the bark hold together once it sets. Do not press too hard, or you will crush the popcorn.
  7. Add the finishing touch. While the chocolate is still wet, sprinkle a pinch of flaky sea salt over the top if you are using it. This step is optional but highly recommended. The salt crystals add that perfect sweet-salty contrast.
  8. Let it set. Place the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate is completely firm and set. If you are in a hurry, you can pop it in the freezer for 15 minutes. The bark should be firm to the touch and snap cleanly when broken.
  9. Break into pieces. Once set, lift the parchment paper out of the baking sheet. Break the bark into irregular pieces with your hands. Do not use a knife—the rustic, hand-broken pieces look more natural and inviting. Aim for pieces that are about 2 to 3 inches across.
