A quick and comforting breakfast casserole made with sausage, eggs, cheese, and toasted bread, ready in 30 minutes. Perfect for busy weeknights or lazy weekends.

  • 6 large eggs
  • 1 ½ cups whole milk
  • 2 cups shredded cheddar cheese
  • 4 cups cubed bread (day-old French loaf or sourdough)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 2 tablespoons butter, melted
  • ¼ cup chopped green onions (optional)
  • ½ cup diced bell pepper (optional)
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F. Cube bread into 1-inch pieces, spread on a baking sheet, brush with melted butter, and toast for 5-7 minutes until lightly golden.
  2. Cook sausage in a large skillet over medium-high heat, breaking into crumbles, for 5-7 minutes until browned. Drain on paper towels.
  3. In a medium bowl, whisk together eggs, milk, salt, pepper, and garlic powder until smooth.
  4. Spread toasted bread cubes evenly in a 9×13-inch baking dish. Top with cooked sausage and 1 ½ cups shredded cheese. Pour egg mixture evenly over the top, pressing gently to help bread absorb.
  5. Sprinkle remaining ½ cup cheese on top. Bake for 20-25 minutes until edges are golden and center is set (jiggles slightly).
  6. Let rest for 5 minutes before cutting into squares. Serve warm.

Notes

Toast the bread to prevent sogginess. Drain sausage well to avoid greasy casserole. Let rest 5 minutes before serving for best texture. Can be assembled night before and baked in the morning (add 5-10 minutes to bake time).
