  • Aged Gouda, 6 oz
  • Soft Goat Cheese Log, 4 oz
  • Sharp White Cheddar, 6 oz
  • Brie, 8 oz wheel (optional)
  • Prosciutto, 4 oz, thinly sliced
  • Genoa Salami, 4 oz, sliced into thin rounds
  • Soppressata, 4 oz, sliced into thin rounds
  • Seedless Red Grapes, 1 cup
  • Dried Apricots, 1/2 cup
  • Mixed Olives, 1 cup (Castelvetrano and Kalamata)
  • Marcona Almonds, 1/2 cup, roasted and salted
  • Honey, for drizzling
  • Fresh Rosemary Sprigs, for garnish
  • 1 Baguette, sliced into thin rounds
  • Assorted Crackers, about 20 (water crackers or rosemary crackers)

Instructions

  1. Take the cheeses out of the refrigerator 2 minutes before you start. Let the brie and goat cheese sit at room temperature while you prep everything else.
  2. Wash and dry the grapes thoroughly under cold water and pat them dry with a clean kitchen towel.
  3. Slice the baguette into thin, even rounds about 1/4 inch thick using a serrated knife. Optionally toast them under the broiler for 1-2 minutes per side.
  4. Arrange the cheeses first: place aged gouda, cheddar, goat cheese, and brie on the board, spacing them evenly. Cut harder cheeses into thin slices or small cubes. Leave the goat cheese log whole. Position the brie wheel centrally.
  5. Add the meats: fold prosciutto slices into loose ribbons and place in a pile. Arrange salami and soppressata slices in a slight fan pattern. Group meats together.
  6. Fill in the gaps with accompaniments: place small bowls of olives and honey on the board. Scatter grapes, dried apricots, and almonds in empty spaces, filling every visible inch.
  7. Add the crackers and bread: arrange baguette slices and crackers around the edges of the board, fanning them out slightly.
  8. Finish with garnishes: tuck fresh rosemary sprigs into the board and drizzle honey over the goat cheese or brie.

Notes

For best flavor, let cheeses sit at room temperature for 20 minutes before serving. Pre-slice harder cheeses for easier serving. If making ahead, assemble everything except crackers and bread; add those just before serving. For a vegetarian version, skip meats and double up on cheeses and accompaniments. For gluten-free, use gluten-free crackers or cucumber rounds instead of baguette.
