These cranberry baked brie bites are the perfect party appetizer—ready in 20 minutes with only 4 ingredients. Flaky puff pastry, warm brie, and sweet-tart cranberry sauce create an irresistible bite that looks fancy but is incredibly easy to make.

Ingredients

Scale
  • 1 sheet frozen puff pastry (about 9–10 ounces), thawed
  • 4 ounces brie cheese, cold
  • 1/3 cup whole berry cranberry sauce
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Fresh rosemary sprigs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Unfold the thawed pastry sheet on a lightly floured cutting board. Cut into 9 equal squares (about 3 inches each).
  3. Cut the brie into 9 equal pieces, each about 1/2 inch thick, leaving the rind on.
  4. Place a piece of brie in the center of each pastry square. Top with about 1 teaspoon of cranberry sauce.
  5. Bring the four corners of each pastry square up to the center, pinching them together to form a little bundle. Leave a small opening at the top for steam to escape.
  6. Brush the top and sides of each pastry bundle with the beaten egg.
  7. Place the baking sheet on the center rack and bake for 12-15 minutes, until the pastry is puffed and deep golden brown. Rotate the pan halfway through for even browning.
  8. Let the bites cool on the baking sheet for 5 minutes. Transfer to a serving platter and garnish with fresh rosemary sprigs.

Notes

For best results, keep brie cold for easier cutting. Don’t overfill the pastry to avoid sogginess. Assemble up to 24 hours ahead and refrigerate; brush with egg wash just before baking. For freezing, assemble unbaked bites, freeze solid, then bake from frozen adding 3-5 minutes.
