These easy cranberry brie puff pastry bites are the perfect 15-minute appetizer for any gathering. Made with frozen puff pastry, creamy brie, and sweet-tart cranberry sauce, they’re flaky, buttery, and absolutely irresistible.

Ingredients

Scale
  • 1 box (17.3 oz) frozen puff pastry sheets, thawed
  • 1 wheel (8 oz) brie cheese
  • ½ cup cranberry sauce (whole berry or jellied)
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 tablespoon honey (optional but recommended)
  • 1 egg, beaten with 1 tablespoon water (for egg wash)
  • Flaky sea salt (for finishing)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Lightly flour your work surface. Unfold one sheet of thawed puff pastry and gently roll it out to about 12×12 inches. Cut the pastry into 9 equal squares (about 4 inches each). Repeat with the second sheet to get 18 squares total.
  3. Slice the brie wheel into 18 small pieces, about ½ inch thick each. If the brie is very soft, pop it in the freezer for 10 minutes first for cleaner cuts.
  4. Place each pastry square on the prepared baking sheet, spacing them about 2 inches apart. Add a piece of brie to the center of each square. Top with about 1 teaspoon of cranberry sauce.
  5. Gently bring the four corners of each pastry square up toward the center, pinching them together lightly to form a little bundle.
  6. In a small bowl, beat the egg with 1 tablespoon of water until smooth. Using a pastry brush, lightly coat the exposed pastry on each bite. Sprinkle with fresh rosemary and a tiny pinch of flaky sea salt.
  7. Bake for 12-14 minutes, until the pastry is golden brown and puffed, and the brie is melted and bubbly.
  8. Let the bites rest on the baking sheet for 3-5 minutes before serving.
  9. Right before serving, drizzle with honey (optional).

Notes

Keep the pastry cold for best puff. Don’t overfill. Use a sharp cutter. Work in batches if needed. Assemble up to 2 hours ahead and refrigerate before baking. Freeze unbaked bites for up to 3 months.
