Easy Cranberry Brie Bites Recipe: The Perfect Appetizer

These Crowd-Pleasing Cranberry Brie Bites are the perfect appetizer for any gathering. Flaky puff pastry cups filled with melted brie and a tangy cranberry compote come together in about 25 minutes for an impressive, stress-free dish.

  • 1 package (17.3 ounces) frozen puff pastry sheets, thawed
  • 8 ounces brie cheese, rind removed and cut into 24 small cubes
  • 1/2 cup whole berry cranberry sauce
  • 1/4 cup dried cranberries, roughly chopped
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 large egg
  • 1 tablespoon water
  • Flaky sea salt, for sprinkling
  • Optional: 2 tablespoons honey or balsamic glaze for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the center of the oven. Lightly spray your mini muffin tin with baking spray.
  2. On a lightly floured surface, gently roll out one sheet of thawed puff pastry to about a 1/8-inch thickness. Using a 2-inch round cutter, cut out 12 rounds. Repeat with the second sheet to get 24 rounds total.
  3. Gently press each pastry round into a cup of the prepared muffin tin, making sure the pastry comes up the sides a little. Do not stretch the dough.
  4. Use a fork to prick the bottom of each pastry cup a few times to prevent them from puffing up too much.
  5. Place one cube of brie into each pastry cup.
  6. Spoon about 1/2 teaspoon of cranberry sauce on top of each brie cube.
  7. Evenly divide the chopped dried cranberries and fresh rosemary among the 24 bites.
  8. In a small bowl, whisk together the egg and 1 tablespoon of water. Lightly brush the edges of each pastry cup with the egg wash.
  9. Bake for 14-16 minutes, until the pastry is golden brown and puffed, and the brie is melted and bubbly.
  10. Let the bites cool in the pan for exactly 5 minutes. Then use a small spoon or offset spatula to gently lift them out and transfer to a serving platter.
  11. Sprinkle a tiny pinch of flaky sea salt over the top of each warm bite. If using honey or balsamic glaze, drizzle a little over the top now.

Notes

Keep the pastry cold for best flakiness. Do not skip removing the brie rind. Check the bites at the 12-minute mark to prevent burning. For best results, serve warm right out of the oven. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated in a 350°F oven for 5-7 minutes.
