Golden, flaky puff pastry cups filled with melted brie and sweet-tart cranberry sauce. These easy, crowd-pleasing appetizers come together in under 30 minutes and are perfect for holiday parties, gatherings, or any occasion.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 4 ounces (113g) brie cheese, rind removed and cut into 24 small cubes (about ½-inch each)
  • ¼ cup (60ml) cranberry sauce (whole berry or jellied)
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Flaky sea salt, for sprinkling
  • Fresh rosemary or thyme, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven. Lightly spray a 24-cup mini muffin tin with non-stick cooking spray.
  2. On a lightly floured surface, unfold the thawed puff pastry sheet. Gently roll it out into a 12×12-inch square.
  3. Using a sharp knife or pizza cutter, cut the pastry into 6 rows by 4 rows to get 24 equal squares (about 2 inches each).
  4. Gently place each pastry square into a mini muffin cup, pressing down the center to create a little well. The corners will stick up.
  5. Place one cube of brie (about ½ inch) into the center of each pastry cup.
  6. Using a small spoon or cookie scoop, add about ½ teaspoon of cranberry sauce on top of each brie cube.
  7. In a small bowl, beat the egg with 1 tablespoon of water until well combined. Using a pastry brush, gently brush the egg wash over the exposed edges of the pastry.
  8. Sprinkle a tiny pinch of flaky sea salt over each bite.
  9. Bake for 12-15 minutes, until the pastry is puffed and golden brown, and the brie is melted and bubbly.
  10. Let the bites cool in the pan for 2-3 minutes. Use a small offset spatula or butter knife to gently lift them out of the pan and transfer to a serving platter.
  11. If using, sprinkle fresh rosemary or thyme leaves over the top. Serve warm.

Notes

Puff pastry must stay cold; if it gets sticky, refrigerate for 10 minutes. Remove brie rind while cheese is cold for easier cutting. Assemble up to 4 hours ahead and refrigerate until baking. For freezing, assemble in muffin tin, freeze solid, then transfer to freezer bag; bake from frozen at 400°F for 15-18 minutes. Use whole berry or jellied cranberry sauce; homemade should be thick and well-chilled.
