This quick and easy Champurrado recipe delivers a thick, creamy Mexican hot chocolate with rich chocolate and cinnamon flavors, ready in just 20 minutes using simple pantry ingredients.

Ingredients

Scale
  • 4 cups whole milk (or 2 cups milk + 2 cups water for a lighter version; use oat milk for dairy-free)
  • 1/2 cup masa harina (preferably Maseca brand)
  • 1/2 cup brown sugar (packed)
  • 4 ounces Mexican chocolate (like Ibarra or Abuelita, chopped)
  • 1 cinnamon stick (or 1 teaspoon ground cinnamon)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (pure)
  • 1/4 teaspoon ground nutmeg (optional)
  • Pinch of cayenne pepper (optional)
  • Whipped cream or marshmallows (optional, for topping)

Instructions

  1. Whisk the masa harina with 1 cup of cold milk until smooth and no lumps remain.
  2. Pour the remaining 3 cups of milk into a medium saucepan. Add the cinnamon stick and salt. Bring to a gentle simmer over medium heat (about 4-5 minutes).
  3. Reduce heat to low. Slowly pour in the masa harina mixture while whisking constantly. Continue whisking for about 2 minutes until it starts to thicken.
  4. Add the chopped Mexican chocolate and brown sugar. Whisk until the chocolate is completely melted and the sugar has dissolved (about 3-4 minutes).
  5. Let the Champurrado simmer on low heat for another 5-7 minutes, stirring occasionally, until it thickens enough to coat the back of a spoon.
  6. Remove from heat. Discard the cinnamon stick. Stir in the vanilla extract.
  7. Serve immediately in mugs. Top with whipped cream or a sprinkle of cinnamon if desired.

Notes

Don’t skip whisking the masa harina with cold milk first to avoid lumps. Keep heat low to prevent scorching. Taste and adjust sweetness or cinnamon as desired. For a thicker version, increase masa harina to 3/4 cup and reduce milk by 1/2 cup. Leftovers can be stored in the refrigerator for up to 3 days; reheat gently with a splash of milk.
