This easy crockpot buffalo chicken dip with blue cheese is the ultimate game day appetizer—hot, cheesy, spicy, and impossible to stop eating. With just 10 minutes of prep, the slow cooker does the rest, making it perfect for parties and last-minute gatherings.

  • 2 lbs boneless, skinless chicken breasts (about 34 medium breasts)
  • 16 oz cream cheese, softened (two standard blocks)
  • 1 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup blue cheese crumbles
  • 1/2 cup ranch dressing
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • Celery sticks and carrot sticks for serving
  • Potato chips or tortilla chips for serving
  • Fresh blue cheese crumbles for garnish
  • Chopped green onions or fresh chives for garnish (optional)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker. Season with a pinch of salt and pepper.
  2. Cut the softened cream cheese into cubes and scatter them over the chicken.
  3. Drizzle the Frank’s RedHot evenly over the cream cheese and chicken.
  4. Sprinkle the garlic powder, onion powder, and black pepper over everything.
  5. Cover the slow cooker and cook on LOW for 3 to 4 hours, until the chicken is tender enough to shred easily.
  6. Using two forks, shred the chicken directly in the slow cooker.
  7. Stir in the shredded cheddar, blue cheese crumbles, and ranch dressing until well combined and the cheeses have melted.
  8. Cover and cook on LOW for another 15-30 minutes until hot, bubbly, and slightly thickened.
  9. Garnish with fresh blue cheese crumbles and chopped green onions. Serve directly from the crockpot.

Notes

For best results, use low heat and add cheeses after shredding the chicken to prevent greasiness. Keep the dip on WARM setting during serving. Leftovers keep in the refrigerator for up to 4 days and freeze well for up to 3 months.
