  • 2 cups heavy cream
  • 1 cup granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 to 1 1/2 cups peppermint schnapps
  • Whipped cream (for topping)
  • Crushed candy canes (for topping)
  • Chocolate shavings (for topping)
  • Mini marshmallows (for topping)

Instructions

  1. Prep your crockpot: Spray the inside with non-stick cooking spray for easy cleanup.
  2. Mix the dry ingredients: In a small bowl, whisk together cocoa powder, sugar, and salt until no lumps remain.
  3. Combine the liquids: Pour milk and heavy cream into the crockpot. Add vanilla extract and stir.
  4. Add the dry mixture: Slowly whisk the cocoa mixture into the milk mixture until smooth and uniform.
  5. Add the chocolate chips: Toss in semi-sweet chocolate chips on top; they will melt as the mixture heats.
  6. Cook on low: Cover and cook on low for 2 hours, stirring occasionally.
  7. Stir and check consistency: Stir well after 2 hours. Chocolate chips should be fully melted. If too thin, cook another 30 minutes on low.
  8. Add the peppermint schnapps: Pour in 1 cup of schnapps, stir, and taste. Add more if desired (up to 1 1/2 cups).
  9. Warm through: Cook on low for another 15 minutes to meld flavors.
  10. Serve and garnish: Ladle into mugs and top with whipped cream, crushed candy canes, chocolate shavings, or mini marshmallows. Serve immediately.

Notes

For a non-alcoholic version, omit peppermint schnapps and add 1 teaspoon peppermint extract. To prevent a skin from forming, stir every 20-30 minutes. Leftovers can be refrigerated for up to 3 days and reheated on low in the crockpot or gently on the stovetop. The base (without schnapps) can be frozen for up to 2 months.
