Easy Crowd-Pleasing Buffalo Chicken Dip with Cream Cheese

This creamy, spicy buffalo chicken dip with cream cheese and ranch is the ultimate party food, ready in under 30 minutes. It’s a crowd-pleaser that disappears fast at any gathering.

  • 16 oz cream cheese, softened to room temperature
  • 1 cup ranch dressing
  • 1/2 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1/4 cup buffalo wing sauce (optional, for extra kick)
  • 3 cups cooked, shredded chicken (about 1.5 pounds)
  • 1 tablespoon butter, melted
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crumbled blue cheese (optional)
  • 2 green onions, thinly sliced
  • Tortilla chips, celery sticks, carrot sticks, or crusty bread for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Shred your chicken into bite-sized pieces. If using a rotisserie chicken, remove skin and shred meat. If cooking your own, boil 1.5 pounds of breasts in salted water for 15-20 minutes until cooked through, then shred with two forks.
  3. Toss the shredded chicken with melted butter and 1/4 cup of the hot sauce. Let it sit while you prepare the base.
  4. Beat the softened cream cheese until smooth using a hand mixer on medium speed for about 2 minutes.
  5. Add the ranch dressing and remaining 1/4 cup of hot sauce to the cream cheese. Beat on low speed until well combined. If using buffalo wing sauce, add it now.
  6. Fold in the shredded chicken mixture gently until everything is coated.
  7. Transfer the mixture to a 9×13-inch baking dish or 2-quart casserole dish and spread evenly.
  8. Sprinkle the shredded cheddar cheese evenly over the top. If using blue cheese crumbles, sprinkle them on now.
  9. Bake for 20-25 minutes until the edges are bubbly and the top is golden brown.
  10. Let it rest for 5 minutes before serving. Sprinkle sliced green onions on top right before serving.

Notes

For best results, use room temperature cream cheese and shred chicken while still warm. To make ahead, assemble without green onions, cover, and refrigerate up to 24 hours; add 5-10 minutes to baking time. For a slow cooker version, combine all ingredients except cheddar, cook on low for 2 hours, then add cheddar and cook 10 more minutes.
