These Friendsgiving Turkey Sliders with Cranberry Aioli are proof that you don’t need hours in the kitchen to create something memorable. They’re quick enough for a Tuesday night, special enough for a celebration, and forgiving enough for even the most stressed-out cook.

Ingredients

Scale
  • 1/2 cup whole-berry cranberry sauce
  • 1/3 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 small clove garlic, finely grated
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 12 slider rolls (Hawaiian sweet rolls recommended)
  • 1 pound deli-sliced roasted turkey breast (thick-sliced)
  • 8 slices provolone cheese
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon brown sugar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 tablespoon poppy seeds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Make the aioli: In a small bowl, combine cranberry sauce, mayonnaise, lemon juice, grated garlic, salt, and pepper. Whisk until smooth. Set aside.
  3. Prepare the rolls: Without separating them, slice the entire block of 12 rolls in half horizontally. Place the bottom half in a 9×13-inch baking dish.
  4. Spread about half the aioli onto the bottom rolls evenly. Reserve the other half for serving.
  5. Layer the turkey slices evenly over the aioli.
  6. Place the provolone slices over the turkey.
  7. Place the top half of the rolls over the cheese. Press down gently.
  8. Make the butter wash: In a small bowl, combine melted butter, brown sugar, Dijon mustard, onion powder, garlic powder, and poppy seeds (if using). Whisk until sugar dissolves. Brush this mixture generously over the top of the rolls.
  9. Cover the dish with aluminum foil and bake for 15 minutes. Remove foil and bake for another 5-7 minutes, until tops are golden brown and cheese is bubbly.
  10. Let the sliders rest for 5 minutes before cutting. Use a sharp knife to cut between the rolls. Serve with remaining cranberry aioli on the side for dipping.

Notes

Don’t skip the foil for the first bake to prevent tops from browning too quickly. Let the garlic sit in lemon juice for a minute to tame raw bite. Assemble up to 4 hours ahead (without butter wash) and refrigerate. Warm serving platter to keep sliders hot longer.
