Ingredients

Scale
  • 4 salmon fillets (6 ounces each, skin on or off)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (optional)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thicker glaze)
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds, toasted (for garnish)
  • Fresh cilantro or parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C). If using a grill, preheat to medium-high heat.
  2. Prepare the foil packets: Tear off four pieces of heavy-duty aluminum foil, each about 12 inches long. Fold each piece in half to create a double layer, then open it back up. Brush the center of each foil piece lightly with olive oil.
  3. Season the salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.
  4. Make the glaze: In a small bowl, whisk together the honey, low-sodium soy sauce, minced garlic, rice vinegar, sesame oil (if using), and red pepper flakes (if using). If desired, whisk in the cornstarch slurry for a thicker glaze.
  5. Assemble the packets: Place one salmon fillet in the center of each prepared foil piece, skin-side down if using skin-on fillets. Spoon about 2 tablespoons of the glaze over each fillet, covering the top and sides evenly. Reserve the remaining glaze.
  6. Seal the packets: Fold the foil over the salmon to create a packet. Crimp the edges tightly to seal, leaving a little room inside for steam to circulate.
  7. Bake: Place the foil packets on a baking sheet and bake for 12-15 minutes, depending on thickness. Salmon is done when it flakes easily with a fork and internal temperature reaches 145°F (63°C). If grilling, place packets directly on grill grates and cook for same time, flipping once halfway.
  8. Optional: For caramelized glaze, open foil packets carefully and place under broiler for 1-2 minutes, watching closely.
  9. Rest and serve: Let salmon rest in foil packets for 2-3 minutes. Transfer to plates, spoon remaining glaze over top, and garnish with green onions, sesame seeds, and fresh herbs. Serve with lemon wedges.

Notes

For best results, let salmon sit at room temperature for 15-20 minutes before cooking. Double the glaze recipe for extra sauce. Foil packets can be assembled up to 4 hours in advance and refrigerated. To reheat leftovers, use a low oven (300°F) covered with foil for about 10 minutes.
