  • 1 small wheel of brie (8 ounces)
  • 1 block of sharp cheddar (8 ounces)
  • 1 block of colby jack or mild gouda (8 ounces)
  • 1 cup red seedless grapes
  • 1 cup green seedless grapes
  • 2 medium apples (any variety), sliced thin and tossed with lemon juice
  • 1 cup baby carrots
  • 1 cup cherry tomatoes, halved if serving to young children
  • 1 cup pretzel sticks or mini pretzels
  • 1 cup whole wheat or multigrain crackers
  • 1 cup butter or cheddar crackers (e.g., goldfish or cheese crackers)
  • 1/4 cup dried cranberries
  • 1/4 cup pumpkin seeds (optional)
  • Fresh rosemary or thyme sprigs for garnish

Instructions

  1. Take the brie out of the refrigerator about 30 minutes before serving to let it come to room temperature. Place the brie in the center or slightly off to one side of a large wooden cutting board or serving platter.
  2. Cut the cheddar and colby jack into small cubes (about 1/2 inch each) or use cookie cutters to make fun shapes. Arrange the cubes and shapes around the brie in small clusters, leaving space between groups.
  3. Wash and dry the grapes thoroughly. Place red grapes in one cluster and green grapes in another. Slice apples thin and toss with lemon juice to prevent browning. Fan the apple slices out near one edge of the board. Add baby carrots and cherry tomatoes in small groups, spacing them out for color.
  4. Pour pretzel sticks into one section of the board, arranging them in a neat pile or fanning them out. Add whole wheat crackers in another spot and butter crackers in a third. Create a mix of heights and textures.
  5. Spoon dried cranberries into a small bowl and place it on the board. Do the same with pumpkin seeds if using. These bowls break up the visual space and keep loose items from rolling.
  6. Tuck fresh rosemary or thyme sprigs around the edges of the board for garnish. Fill any empty spots with extra crackers or grapes. Serve immediately or cover loosely with plastic wrap and refrigerate for up to 2 hours. If refrigerated, take the board out 15 minutes before serving to let the cheese come back to room temperature.

Notes

Let the brie come to room temperature for best texture. Cut everything into bite-sized pieces for little hands. Use a mix of textures (crunchy and creamy) for appeal. Don’t overcrowd the board; leave breathing room between clusters. For a big crowd, use two smaller boards instead of one giant one.
