A light and hearty slow cooker chicken taco soup that’s easy to make with simple ingredients. Perfect for busy days, this set-and-forget meal delivers tender chicken and deep, smoky flavor in every bowl.

  • 1.5 pounds boneless skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 cup frozen corn
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional toppings: fresh cilantro, diced avocado, shredded cheese, Greek yogurt, lime wedges, crushed tortilla chips

Instructions

  1. Prep your ingredients. Dice the onion and mince the garlic. Drain and rinse the black beans and kidney beans. Measure out the spices and set them aside.
  2. Layer everything in the slow cooker. Start with the diced onion and minced garlic at the bottom. Place the chicken breasts on top. Then add the fire-roasted tomatoes, tomato sauce, drained beans, and frozen corn. Don’t stir yet.
  3. Mix the broth and spices. In a separate bowl or large measuring cup, whisk together the chicken broth, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Pour this mixture over everything in the slow cooker.
  4. Give it a gentle stir, making sure the chicken is mostly submerged in the liquid.
  5. Put the lid on and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  6. About 30 minutes before serving, use two forks to shred the chicken right in the slow cooker. Stir the shredded chicken back into the soup.
  7. Taste and adjust seasoning as needed.
  8. Let the soup rest on warm for 10 to 15 minutes before serving.

Notes

For a thicker soup, mash some beans against the side of the slow cooker. Use low-sodium broth to control salt. Fire-roasted tomatoes add deeper flavor. Toast spices in a dry skillet for 30 seconds for extra depth. Rinse frozen corn to keep broth clear. Chicken can be shredded directly in the slow cooker to retain juices.
