Instructions

  1. Preheat your oven to 425°F (220°C). Place the rack in the middle position. Line a large baking sheet with parchment paper.
  2. Wash and dry the delicata squash thoroughly. Pat dry with a kitchen towel.
  3. Trim about ¼ inch from both ends of each squash to create flat, stable surfaces. Discard the ends.
  4. Slice the squash crosswise into rings about ½ inch thick. Aim for consistent thickness. You should get about 20-24 rings from two medium squash.
  5. Use a small spoon or your fingers to scoop out the seeds from each ring. Don’t worry about being perfect.
  6. In a small bowl, whisk together the maple syrup, olive oil, salt, and pepper until well combined.
  7. Place the squash rings in a large bowl. Pour the glaze over them and toss gently with your hands or a spatula until every ring is coated.
  8. Arrange the rings on the prepared baking sheet in a single layer, making sure they are not touching. If they overlap, use two baking sheets.
  9. Roast for 10 minutes.
  10. Flip each ring using a metal spatula. Return to the oven and roast for another 8-10 minutes, until the edges are deep golden brown and caramelized and the centers are tender when pierced with a fork.
  11. Optional: For extra caramelization, switch the oven to broil for 1-2 minutes, watching closely to prevent burning.
  12. Remove from the oven. If using fresh herbs, sprinkle them over the hot rings. Let the squash rest for 2 minutes before serving.
