  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1.5 pounds boneless, skinless chicken thighs
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup dried orzo pasta
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat the olive oil in a Dutch oven over medium heat. Add the diced onion and cook for 3-4 minutes until soft and translucent.
  2. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Season the chicken thighs with salt, pepper, and dried oregano on both sides. Push the onions and garlic to the side, add the chicken, and cook for 4-5 minutes per side until golden brown.
  4. Add the chopped sun-dried tomatoes and red pepper flakes (if using). Stir for about 1 minute.
  5. Pour in the chicken broth, scraping the bottom of the pot to loosen browned bits.
  6. Bring the broth to a gentle boil, then reduce heat to low, cover, and simmer for 15 minutes until the chicken is cooked through.
  7. Remove the chicken thighs from the pot and shred them with two forks.
  8. Return the shredded chicken to the pot. Add the orzo pasta and cook for 8-10 minutes until tender, stirring occasionally.
  9. Reduce heat to low and stir in the heavy cream and grated Parmesan cheese until melted and smooth.
  10. Season with salt and pepper to taste. If too thick, add a splash of broth; if too thin, simmer uncovered to reduce.
  11. Ladle into bowls, garnish with fresh parsley, and serve immediately.

Notes

For best results, brown the chicken well for flavor. Cook orzo separately if not serving immediately to avoid it absorbing too much liquid. When adding cream, keep heat low to prevent curdling. Sun-dried tomatoes and Parmesan are salty, so season carefully.
