This no-churn peach bourbon ice cream is creamy, packed with real fruit, and has a grown-up twist. It’s a budget-friendly dessert that requires no ice cream maker, perfect for summer gatherings.

  • 4 medium ripe peaches (about 2 cups when chopped; fresh or frozen, thawed)
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 2 cups heavy cream (cold)
  • 1 can (14 ounces) sweetened condensed milk (full-fat)
  • 1 teaspoon vanilla extract (pure)
  • Pinch of salt
  • 2 tablespoons bourbon (optional, for adult version; use bourbon extract for kid-safe option)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and slice peaches into wedges (about 8 per peach). Toss with sugar and lemon juice, then spread in a single layer on the baking sheet.
  3. Roast for 20-25 minutes until soft and juices are bubbling. Let cool completely.
  4. Transfer cooled peaches to a blender or food processor. Pulse until smooth (or leave some chunks). Set aside about 1 cup of puree.
  5. In a large mixing bowl, pour cold heavy cream. Beat with a hand mixer or stand mixer on medium-high speed until stiff peaks form (3-5 minutes).
  6. In a separate bowl, whisk together sweetened condensed milk, vanilla extract, and salt. If making adult version, add bourbon now. Fold in peach puree until combined.
  7. Take about 1 cup of whipped cream and stir it into the peach mixture to lighten. Then gently fold the remaining whipped cream into the peach base using a rubber spatula until just combined.
  8. Pour mixture into a loaf pan (9×5-inch) or freezer-safe container. Smooth the top. Press plastic wrap directly onto the surface to prevent ice crystals. Cover with foil or lid.
  9. Freeze for at least 6 hours or overnight.
  10. Let ice cream sit at room temperature for 5-10 minutes before scooping. Serve in bowls or cones.

Notes

Roasting peaches concentrates flavor and removes excess water to prevent ice crystals. For kid-friendly version, skip bourbon or use 1 teaspoon bourbon extract mixed with 2 tablespoons milk.
