This one-pot creamy chicken and dumplings is a hug in a bowl, a memory recreated, and a reliable weeknight hero all rolled into one. It uses simple ingredients to create something that feels truly special.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced (about 1 cup)
  • 2 medium carrots, peeled and diced (about 1 cup)
  • 2 celery stalks, diced (about 1/2 cup)
  • 3 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1 cup whole milk (or 2%)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1 1/2 pounds boneless, skinless chicken thighs
  • 1 cup frozen peas
  • 1 1/2 cups all-purpose flour (for dumplings)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt (for dumplings)
  • 3 tablespoons cold unsalted butter, cut into small cubes (for dumplings)
  • 3/4 cup whole milk, cold (for dumplings)
  • 1 tablespoon fresh parsley, chopped (optional, for dumplings)

Instructions

  1. Sauté the Aromatics: Place your Dutch oven over medium heat and add 2 tablespoons of butter. Once melted and shimmering, add the diced onion, carrots, and celery. Cook, stirring occasionally, for about 4-5 minutes, until the onions are translucent and the vegetables have started to soften. Add the minced garlic and cook for another 30 seconds until fragrant.
  2. Build the Roux: Sprinkle 1/3 cup of flour evenly over the softened vegetables. Stir constantly with a wooden spoon for about 1-2 minutes until the flour coats the vegetables and starts to turn a very light golden color.
  3. Create the Broth: Slowly pour in 4 cups of chicken broth while whisking continuously. Add 1 cup of milk, dried thyme, rosemary, salt, and pepper. Whisk until everything is smooth and combined.
  4. Add the Chicken: Nestle the chicken thighs into the broth. Bring the mixture to a gentle boil, then reduce the heat to low, cover the pot, and let it simmer for 25-30 minutes until the chicken is cooked through and shreds easily.
  5. Shred the Chicken: Using tongs, transfer the cooked chicken thighs to a cutting board. Let them rest for a minute or two, then use two forks to shred the meat into bite-sized pieces. Return the shredded chicken to the pot and stir in the frozen peas. Adjust salt and pepper if needed.
  6. Make the Dumpling Dough: In a mixing bowl, whisk together 1 1/2 cups of flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Add the cold, cubed butter. Using a pastry cutter or two forks, cut the butter into the flour until the mixture looks like coarse crumbs with some pea-sized bits of butter remaining. Pour in 3/4 cup of cold milk and stir with a fork just until a shaggy dough forms. Fold in the chopped parsley if desired.
  7. Drop the Dumplings: Bring the stew back up to a gentle simmer over medium heat. Using a small cookie scoop or two spoons, drop rounded tablespoons of the dumpling dough evenly over the surface of the simmering stew. Immediately cover the pot with a tight-fitting lid and reduce the heat to low. Let them steam for 18-20 minutes. Do not lift the lid.
  8. Check for Doneness: After 18 minutes, carefully remove the lid. The dumplings should have puffed up and look fluffy and cooked through. Test one by inserting a toothpick into the center—it should come out clean. If needed, cover and cook for another 2-3 minutes.
  9. Rest and Serve: Turn off the heat and let the pot sit uncovered for about 5 minutes. Ladle the creamy chicken and dumplings into bowls, making sure each serving gets a good amount of stew and a few dumplings. Garnish with extra fresh parsley if desired.

Notes

Don’t rush the roux—cook it for 1-2 minutes to avoid raw flour taste. For fluffy dumplings, use cold butter and minimal mixing. Do not lift the lid while dumplings are steaming. Leftovers keep in the refrigerator for up to 4 days. For freezing, freeze the stew base without dumplings and make fresh dumplings when reheating.
