This overnight cinnamon roll casserole is the ultimate Christmas morning breakfast. With just 10 minutes of prep on Christmas Eve, you can wake up to a warm, gooey, and utterly delicious casserole that tastes like you spent hours on it.

Ingredients

Scale
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with cream cheese icing
  • 1 cup heavy cream
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • Reserved icing from the cinnamon roll cans
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon milk
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Grease a 9×13-inch baking dish with butter or non-stick cooking spray.
  2. Open both cans of cinnamon rolls and set the icing packets aside. Cut each cinnamon roll into quarters using a sharp knife or kitchen shears. Arrange the pieces evenly in the prepared baking dish in a single layer as much as possible.
  3. In a large mixing bowl, whisk together the heavy cream, eggs, vanilla extract, cinnamon, nutmeg, and salt until completely combined and slightly frothy, about 30 seconds.
  4. Pour the custard mixture evenly over the cinnamon roll pieces. Gently press down with a spatula to coat every piece. Cover tightly with plastic wrap or aluminum foil and refrigerate for at least 6 hours or overnight.
  5. On Christmas morning, remove the casserole from the fridge and let it sit at room temperature for 20 minutes while preheating the oven to 350°F (175°C).
  6. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes, until the top is golden brown and the center is set (a knife inserted in the center comes out clean).
  7. While the casserole bakes, make the glaze: In a small microwave-safe bowl, combine the reserved icing and softened cream cheese. Microwave for 15-20 seconds, then stir until smooth. Add milk one teaspoon at a time until you reach a drizzle-able consistency.
  8. Let the casserole cool for 5 minutes, then drizzle the glaze generously over the top. Serve warm.

Notes

Don’t skip the overnight rest; it allows the custard to soak into the rolls for a soft, tender texture. Use full-fat heavy cream for the best custard-like texture. Cover with foil for the first half of baking to prevent over-browning. Let the casserole rest 5 minutes before glazing so the glaze stays on top. Double the glaze recipe if serving a crowd.
