  • 8 ounces fresh spinach (about 4 cups packed)
  • 6 large eggs, room temperature
  • ½ cup whole milk (120 ml)
  • ¼ cup heavy cream (60 ml)
  • 6 ounces feta cheese, crumbled (170 grams)
  • 1 medium shallot, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh chives, chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • ⅛ teaspoon nutmeg, freshly grated (optional)
  • 1 tablespoon butter or olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish with butter or cooking spray and set aside.
  2. Heat 1 tablespoon of butter or olive oil in a large skillet over medium heat. Add the shallot and cook for 2 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the spinach in handfuls, stirring constantly, until all spinach is wilted, about 3-4 minutes. Remove from heat.
  4. Transfer the cooked spinach to a clean kitchen towel or paper towels. Let cool slightly, then squeeze firmly over the sink to remove excess liquid.
  5. Place the squeezed spinach on a cutting board and roughly chop.
  6. In a medium bowl, whisk together the eggs, milk, heavy cream, salt, pepper, and nutmeg until smooth and slightly frothy, about 30 seconds.
  7. Add the chopped spinach, crumbled feta, dill, and chives to the egg mixture. Stir gently with a spatula until evenly distributed.
  8. Pour the mixture into the prepared pie dish. Spread evenly and tap the dish gently on the counter to release air bubbles.
  9. Bake for 25-30 minutes, until the edges are set and golden, and the center is just barely jiggly. A knife inserted near the center should come out clean.
  10. Let the quiche cool on a wire rack for at least 10 minutes before slicing. Serve warm or at room temperature.

Notes

Don’t skip squeezing the spinach dry—this prevents a watery quiche. Room temperature ingredients yield a fluffier texture. Let the quiche rest for 10 minutes before slicing for cleaner pieces. Use a serrated knife for best results. The quiche can be assembled the night before and baked in the morning.
