A sparkling holiday cocktail featuring tart cranberries, piney rosemary simple syrup, and dry Prosecco. Quick to make and perfect for Christmas parties.

Ingredients

Scale
  • 1 cup water (240 ml)
  • 1 cup granulated sugar (200 g)
  • 3–4 sprigs fresh rosemary, plus extra for garnish
  • 1 strip orange zest (optional)
  • 1 bottle dry Prosecco, chilled (750 ml)
  • 1/2 cup fresh or frozen cranberries (60 g), plus extra for garnish
  • 2 tablespoons rosemary simple syrup, or to taste
  • 1 ounce gin or vodka (optional)
  • Ice cubes (optional, for serving on the rocks)

Instructions

  1. Make the rosemary simple syrup: In a small saucepan, combine 1 cup water and 1 cup sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves completely (about 3-4 minutes). Add 3-4 sprigs fresh rosemary and the strip of orange zest if using. Reduce heat to low and simmer for 5 minutes. Remove from heat and let steep for at least 20 minutes. Strain out the rosemary and zest, and let the syrup cool completely.
  2. Prepare the cranberries: Place 1/2 cup cranberries in the bottom of your serving glass. Use a muddler or the back of a wooden spoon to gently crush them until they release some juice.
  3. Add the syrup: Pour 2 tablespoons of the cooled rosemary simple syrup over the muddled cranberries. Adjust to taste.
  4. Optional: Add gin or vodka: If desired, add 1 ounce of gin or vodka and stir gently to combine.
  5. Pour the Prosecco: Slowly pour the chilled Prosecco into the glass, tilting it slightly to preserve the bubbles. Fill almost to the top, leaving room for garnish.
  6. Garnish and serve: Add a fresh sprig of rosemary and a few whole cranberries to each glass. Serve immediately.

Notes

Don’t skip the steeping time for the syrup—20 minutes minimum for full rosemary flavor. Use a dry Prosecco (brut or extra dry) to avoid cloying sweetness. Chill all ingredients and glasses before serving to preserve bubbles. The syrup can be made ahead and stored in the fridge for up to two weeks.
