  • 1 sheet frozen puff pastry, thawed
  • 4 ounces Brie cheese, rind removed
  • 1/3 cup whole berry cranberry sauce
  • 1 large egg, beaten
  • 1 tablespoon fresh rosemary, finely chopped (optional)
  • Flaky sea salt, for finishing
  • 2 tablespoons honey (optional, for drizzle)
  • 1 teaspoon fresh thyme leaves (optional, for drizzle)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven. Lightly grease a mini muffin tin with butter or non-stick spray.
  2. On a lightly floured surface, gently roll out the thawed puff pastry sheet to about 1/8-inch thickness. Using a 2-inch round cookie cutter, cut out 24 circles. Gently gather and re-roll scraps if needed.
  3. Gently press each pastry circle into a cup of the mini muffin tin, creating a little cup shape. Prick the bottom of each cup with a fork a couple of times.
  4. Place the muffin tin on a baking sheet and pre-bake the pastry cups for 8 minutes, until just starting to turn golden and set.
  5. While the cups bake, cut the Brie into 24 small cubes, about 1/2-inch each. If sticky, freeze for 5 minutes first.
  6. Remove the pre-baked pastry cups from the oven. Place one cube of Brie into each cup. Top each with about 1/2 teaspoon of cranberry sauce.
  7. Brush the edges of each pastry cup with the beaten egg. Sprinkle a tiny pinch of flaky sea salt and a few bits of fresh rosemary over the top.
  8. Return the tin to the oven and bake for another 8-10 minutes, until the pastry is deep golden brown and the Brie is melted and bubbly.
  9. Let the bites cool in the pan for 5 minutes. Use a small offset spatula or butter knife to gently lift them out.
  10. If using, drizzle with honey-thyme mixture while still warm. Serve immediately.

Don’t skip the pre-bake step—it ensures the pastry stays crisp. Keep Brie cold for easier cutting. Watch the oven time; start checking at 7 minutes during the second bake. For best texture, serve immediately after cooling slightly. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated in a 350°F oven for 5-7 minutes.
