  • 1 teaspoon salt
  • 1 cup cold unsalted butter, cut into small cubes
  • 1/2 cup ice water (plus a little more if needed)
  • 6 medium apples, peeled and cored (Granny Smith, Honeycrisp, or Fuji)
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 2 tablespoons unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup water
  • 1/4 cup unsalted butter, cut into pieces
  • 1 teaspoon vanilla extract

Instructions

  1. Make the pastry: In a large bowl, whisk together the flour and salt. Add the cold butter cubes and cut them in using a pastry cutter or two forks until the mixture looks like coarse crumbs with some pea-sized butter pieces. Drizzle in the ice water, a tablespoon at a time, and stir with a fork until the dough just comes together. Flatten into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  2. Prep the apples: While the dough chills, peel and core your apples, leaving them whole.
  3. Make the cinnamon sugar filling: In a small bowl, mix together the granulated sugar, cinnamon, and nutmeg. Roll each apple in the sugar mixture, making sure to get some inside the core cavity too. Set the remaining sugar mixture aside.
  4. Roll out the pastry: On a lightly floured surface, roll the chilled dough into a large rectangle, about 18×12 inches and 1/8-inch thick. Cut it into 6 equal squares.
  5. Assemble the dumplings: Place a sugared apple in the center of each pastry square. Put a small pat of butter (about 1 teaspoon) inside the core cavity of each apple. Bring the corners of the pastry up to the top of the apple and pinch the edges together to seal. Place the dumplings in a greased 9×13-inch baking dish, seam sides down.
  6. Make the cinnamon sugar glaze: In a small saucepan, combine the granulated sugar, brown sugar, flour, cinnamon, salt, and water. Whisk until smooth. Bring to a boil over medium heat, stirring constantly. Once it boils, reduce heat and simmer for 2 minutes until slightly thickened. Remove from heat and stir in the butter and vanilla until smooth and glossy.
  7. Pour and bake: Pour the warm glaze over and around the dumplings. Bake at 375°F (190°C) for 35-40 minutes, or until the pastry is golden brown and the apples are tender when pierced with a fork.
  8. Rest and serve: Let the dumplings cool for 10-15 minutes before serving. Spoon some of that gorgeous glaze over each serving.

Notes

Keep everything cold for flaky pastry. Don’t overwork the dough. Use a sharp peeler. Bake on the lower rack. Spoon sauce over dumplings halfway through baking. Let rest before serving. For gluten-free, use a gluten-free flour blend or cornstarch to thicken sauce. For dairy-free, use vegan butter. Can be made ahead and refrigerated for up to 24 hours before baking, or frozen unbaked for up to 3 months.
