  • ¼ cup (60g) Greek yogurt (plain, optional)
  • 1 tablespoon (15ml) honey or maple syrup (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt (if peanut butter is unsalted)

Instructions

  1. In a mixing bowl, mash the banana well with a fork until almost liquid, with no large chunks.
  2. Add the peanut butter and milk. Whisk or stir until the peanut butter is fully incorporated and no streaks remain.
  3. Stir in the Greek yogurt and honey or maple syrup (if using) until smooth.
  4. Add the rolled oats, chia seeds (if using), and a pinch of salt (if needed). Stir well to coat every oat.
  5. Divide the mixture evenly into 4 small mason jars or airtight containers (about 8 ounces each), leaving about an inch of space at the top.
  6. Add optional toppings like sliced banana, extra peanut butter drizzle, chocolate chips, or cinnamon.
  7. Seal the jars and refrigerate for at least 6 hours or overnight.
  8. In the morning, stir the oats, add a splash of milk if too thick, and serve cold or at room temperature. Microwave for 30-45 seconds if desired.

Notes

Mash the banana completely for a smooth, creamy texture. Let peanut butter come to room temperature for easier mixing. Adjust liquid to your preferred thickness. Make a double batch for up to 5 days of breakfasts. Do not freeze. For best results, use rolled oats, not instant or steel-cut.
