  • 8 slices of deli ham (thinly sliced)
  • 1 cup shredded cheddar cheese (sharp cheddar preferred)

Instructions

  1. In a medium bowl, combine the softened cream cheese, Dijon mustard, mayonnaise (if using), and a pinch of garlic powder. Stir until smooth and well combined.
  2. Lay one tortilla flat on a cutting board. If tortillas are dry or stiff, warm them in the microwave for 10-15 seconds.
  3. Using a spatula, spread a thin, even layer of the cream cheese mixture over the entire surface of the tortilla, leaving about a half-inch border around the edges.
  4. Place two slices of deli ham on top of the cream cheese spread, overlapping slightly to cover the tortilla evenly.
  5. Sprinkle about 1/4 cup of shredded cheddar cheese evenly over the ham. Press down gently so it sticks.
  6. Starting from one edge, roll the tortilla tightly but not so tight that the filling squeezes out the ends. Place the roll seam-side down.
  7. Wrap each roll tightly in plastic wrap or place in a container with a lid. Refrigerate for at least 30 minutes.
  8. After chilling, unwrap the rolls and place on a cutting board. Using a sharp serrated knife, slice each roll into 1-inch thick pieces (about 6-8 pinwheels per tortilla). Clean the knife between cuts for cleanest slices.
  9. Arrange the pinwheels on a plate or pack directly into lunchboxes. Serve cold or at room temperature.
