Kid-Approved Slow Cooker White Chicken Chili with Corn

This creamy, mildly spicy white chicken chili is made in the slow cooker with tender chicken, sweet corn, and great northern beans. It’s a family-friendly weeknight dinner that’s easy to prepare and always a crowd-pleaser.

  • 1 ½ pounds boneless, skinless chicken breasts (about 3 medium breasts)
  • 2 cans (15 ounces each) great northern beans, drained and rinsed
  • 1 can (15 ounces) sweet corn, drained
  • 1 can (4 ounces) diced green chiles
  • 4 cups low-sodium chicken broth
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon chili powder
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
  • 2 ounces cream cheese, softened and cut into cubes
  • Fresh cilantro, chopped (for garnish)
  • Shredded Monterey Jack or cheddar cheese (about ½ cup, for topping)
  • Sour cream or plain Greek yogurt (for topping)
  • Tortilla chips or strips (for topping)
  • Lime wedges (for serving)

Instructions

  1. Dice the onion and mince the garlic. Drain and rinse the great northern beans and corn.
  2. Place the chicken breasts in the bottom of the slow cooker. Sprinkle the diced onion and minced garlic over the top.
  3. Pour the drained great northern beans and corn over the chicken and onions.
  4. Sprinkle the diced green chiles, cumin, oregano, chili powder, salt, and pepper over the top.
  5. Slowly pour the chicken broth into the slow cooker.
  6. Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the chicken is tender and shreds easily.
  7. About 30 minutes before serving, remove the chicken breasts and shred with two forks. Return the shredded chicken to the slow cooker.
  8. Add the cubed cream cheese and stir gently until melted and the broth is creamy (about 2-3 minutes).
  9. Taste and adjust seasoning with additional salt or pepper if needed.
  10. Ladle into bowls and top with shredded cheese, sour cream, cilantro, a squeeze of lime juice, and tortilla chips. Serve immediately.

Notes

For best results, use room temperature cream cheese to prevent clumping. The chili tastes even better the next day. To make dairy-free, skip the cream cheese and stir in a can of full-fat coconut milk at the end. For a thicker chili, mash some beans against the side of the slow cooker or stir in a cornstarch slurry.
