  • 1 cup heavy cream (240 ml)
  • ½ cup unsweetened cocoa powder (50 grams)
  • ¾ cup granulated sugar (150 grams)
  • 2 teaspoons vanilla extract (10 ml)
  • ¼ teaspoon salt
  • ½ cup semi-sweet chocolate chips (90 grams, optional)
  • Optional: cinnamon stick, pinch of nutmeg, or peppermint extract

Instructions

  1. Prep your slow cooker: rinse and dry it, then set to low.
  2. In a small bowl, whisk together cocoa powder and sugar to break up clumps.
  3. Microwave ½ cup of milk for 30 seconds until warm. Slowly whisk into cocoa-sugar mixture to form a smooth paste (slurry).
  4. Pour remaining 5 ½ cups milk and heavy cream into the slow cooker. Add cocoa slurry, salt, and vanilla extract. Whisk until evenly combined.
  5. Sprinkle chocolate chips over the top (if using). Do not stir.
  6. Cook on low for 2 to 3 hours. After 1 hour, whisk to incorporate melted chocolate chips.
  7. Taste and adjust sweetness or salt as needed.
  8. Switch slow cooker to warm setting to keep hot for serving.
  9. Ladle into mugs and top with marshmallows, whipped cream, or cinnamon.

Notes

For best flavor, use Dutch-processed cocoa and pure vanilla extract. Do not rush by using high heat; low heat prevents scalding. The slurry step is crucial to avoid lumps. Leftovers can be refrigerated for up to 4 days and reheated gently.
