A quick and easy 5-ingredient popcorn bark that captures the nostalgic fall flavor of candy corn without the guilt. Made with popcorn, white chocolate, honey, dried fruit, and a pinch of salt, this sweet-salty treat comes together in about 15 minutes.

Ingredients

Scale
  • 8 cups popped popcorn (air-popped or lightly salted)
  • 1 cup white chocolate chips or melting wafers
  • 2 tablespoons honey or maple syrup
  • 1/2 cup dried apricots or dried cranberries, chopped
  • 1/4 teaspoon sea salt, plus a pinch for garnish

Instructions

  1. Prepare the popcorn: Pop 8 cups of popcorn using your preferred method. Spread it out on a parchment-lined baking sheet in an even layer, removing any unpopped kernels. Let it cool completely, about 5 minutes.
  2. Melt the white chocolate: Place 1 cup of white chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until smooth and fully melted (about 1.5 to 2 minutes total). Be careful not to overheat.
  3. Add the honey: Once the chocolate is melted, stir in 2 tablespoons of honey or maple syrup until fully combined. The mixture will look slightly thinner and glossier.
  4. Drizzle and toss: Pour the chocolate-honey mixture over the popcorn in a slow, steady stream. Use a spatula to gently fold and toss the popcorn, making sure every kernel gets a little coating. Do not overmix.
  5. Add the dried fruit: Sprinkle the chopped dried apricots or cranberries evenly over the coated popcorn. Gently press them into the chocolate with your fingertips. Add a pinch of flaky sea salt on top.
  6. Set the bark: Let the bark sit at room temperature for 20-30 minutes, or until the chocolate is firm. For faster setting, refrigerate for 10 minutes (do not leave longer to avoid sogginess).
  7. Break into pieces: Once set, use your hands to break the bark into irregular, snack-sized pieces.

Notes

White chocolate is finicky; melt in short bursts and stir frequently. If it seizes, add a teaspoon of coconut oil and stir vigorously. Use room-temperature popcorn to prevent chocolate from seizing. Store in an airtight container at room temperature for up to 3 days. Do not refrigerate.
