Lightened-Up Cranberry Brie Bites: Easy Puff Pastry Appetizer

These Lightened-Up Cranberry Brie Bites are the perfect easy appetizer, featuring flaky puff pastry, creamy brie, and tart cranberry sauce. Ready in about 30 minutes, they’re ideal for holiday parties, game day, or any gathering.

  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, rind removed and cut into 24 small cubes (about 1/2-inch each)
  • 1/3 cup whole berry cranberry sauce
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • 1 tablespoon fresh rosemary, finely chopped (optional)
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C). Place one rack in the center position. Lightly grease a mini muffin tin with cooking spray or butter, or line with mini paper liners.
  2. On a lightly floured surface, unfold the thawed puff pastry sheet. If it cracks at the seams, press it back together with your fingers. Use a sharp knife or pizza cutter to cut the sheet into 24 equal squares, about 2 inches each (roughly 4 rows by 6 rows).
  3. Gently press each pastry square into a well of the mini muffin tin. Don’t stretch the dough; let the corners stick up a bit for a rustic look.
  4. Drop about 1/2 teaspoon of cranberry sauce into each pastry cup. Top with one cube of brie. Do not overfill.
  5. In a small bowl, beat the egg with 1 tablespoon of water. Using a pastry brush, lightly brush the edges of each pastry cup. Be careful not to get egg wash on the brie. Sprinkle with fresh rosemary and a tiny pinch of flaky sea salt.
  6. Place the muffin tin in the preheated oven and bake for 12 to 15 minutes, until the pastry is puffed and golden brown and the brie is melted and bubbly.
  7. Let them cool in the pan for about 5 minutes. Then use a small offset spatula or butter knife to gently lift them out and transfer to a serving platter. Serve warm.

Notes

Keep the pastry cold for best flakiness. If the dough gets sticky, refrigerate for 10 minutes. Cut brie while cold for clean cubes. For make-ahead, assemble up to a day in advance, refrigerate, and add egg wash just before baking. Reheat leftovers in a 350°F oven for 5-7 minutes.
