A lighter twist on classic deviled eggs, featuring a creamy Greek yogurt and ranch filling, crispy turkey bacon, and sharp cheddar cheese. Perfect for gatherings and easy to make in under 25 minutes.

Ingredients

Scale
  • 12 large eggs
  • Ice water bath
  • 1/3 cup plain Greek yogurt (2% recommended)
  • 1/4 cup light mayonnaise
  • 1/2 cup sharp cheddar cheese, finely shredded
  • 1 tablespoon ranch seasoning mix
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon garlic powder (optional)
  • Salt and black pepper to taste
  • 4 slices turkey bacon
  • 1 tablespoon fresh chives, finely chopped
  • Paprika for dusting

Instructions

  1. Hard-boil the eggs: Place 12 eggs in a single layer in a large pot. Cover with cold water by about an inch. Bring to a rolling boil over high heat (8-10 minutes). Once boiling, cover the pot, turn off the heat, and let sit for exactly 12 minutes.
  2. Prepare the ice bath: While eggs sit, fill a medium bowl with ice and cold water. After 12 minutes, transfer eggs to the ice bath using a slotted spoon. Let chill for at least 10 minutes.
  3. Peel the eggs: Gently tap each egg on the counter to crack the shell, roll between palms to loosen, and peel starting from the wider end. Rinse off shell fragments and pat dry.
  4. Slice and scoop: Slice each egg in half lengthwise. Pop out yolks into a medium mixing bowl. Arrange egg white halves on a serving platter, cut-side up. If they wobble, slice a tiny sliver off the bottom.
  5. Make the filling: Mash egg yolks with a fork until crumbly. Add Greek yogurt, light mayonnaise, shredded cheddar, ranch seasoning, yellow mustard, and garlic powder. Mix until smooth and creamy. Taste and adjust salt and pepper as needed.
  6. Cook the bacon: Cook turkey bacon in a small skillet over medium heat until crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain and cool. Crumble into small pieces.
  7. Fill the eggs: Spoon filling into a piping bag or zip-top bag with a corner snipped off. Pipe filling into each egg white half, dividing evenly (about 24 halves).
  8. Garnish and serve: Sprinkle crumbled bacon evenly over filled eggs. Top with fresh chopped chives and a light dusting of paprika. Serve immediately or refrigerate until ready to serve.

Notes

Use eggs that are at least a week old for easier peeling. For the creamiest filling, let eggs and yogurt come to room temperature before mixing. If filling is too thick, add a teaspoon of milk or water; if too thin, add more shredded cheese. Garnish (bacon, chives, paprika) is best added just before serving to keep bacon crispy and chives bright. Store leftovers in an airtight container in the refrigerator for up to 2 days; do not freeze.
