Lighter Cranberry Bliss Bar Blondies with White Chocolate Drizzle - featured image

These lighter blondies capture everything wonderful about those seasonal coffee shop bars—the tart pop of cranberries, the creamy white chocolate, that soft, buttery base—but without the sugar crash and calorie guilt. They’re the perfect everyday indulgence that feels special enough for a treat.

Ingredients

Scale
  • 1/2 cup unsalted butter, melted (113g)
  • 3/4 cup light brown sugar, packed (150g)
  • 1/4 cup granulated sugar (50g)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup plain Greek yogurt (120g)
  • 1 cup whole wheat pastry flour (120g)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup dried cranberries (80g)
  • 1/2 cup white chocolate chips (85g)
  • 1 teaspoon coconut oil or vegetable oil
  • 2 tablespoons dried cranberries, roughly chopped (optional, for topping)
  • 1 tablespoon orange zest (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides. Lightly spray the paper with nonstick spray.
  2. Melt the butter in a microwave-safe bowl in 30-second intervals until just melted. Let it cool for 5 minutes.
  3. In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
  4. Whisk in the eggs one at a time, ensuring each is fully incorporated. Add the vanilla extract and Greek yogurt, whisking until smooth and glossy.
  5. In a separate small bowl, whisk together the whole wheat pastry flour, baking powder, baking soda, and salt.
  6. Add the dry ingredients to the wet mixture. Fold gently with a rubber spatula just until no streaks of flour remain. Do not overmix.
  7. Gently fold in the dried cranberries (and orange zest if using) until evenly distributed.
  8. Scrape the batter into the prepared pan and spread into an even layer.
  9. Bake for 20-25 minutes, until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs. Start checking at 20 minutes.
  10. Let the blondies cool in the pan on a wire rack for at least 30 minutes. Then use the parchment paper overhang to lift them out and transfer to the rack to cool completely.
  11. Once completely cool, place the white chocolate chips and coconut oil in a small microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until smooth and fully melted (about 60-90 seconds total).
  12. Drizzle the melted white chocolate over the blondies using a fork or small spoon. Sprinkle extra chopped dried cranberries on top while the chocolate is still wet.
  13. Let the drizzle set for about 20 minutes at room temperature, or refrigerate for 10 minutes to speed up.
  14. Slice into 16 squares using a sharp knife, wiping the knife clean between cuts.

Notes

Don’t overmix the batter to avoid tough blondies. Check for doneness early—start at 20 minutes. Let blondies cool completely before drizzling with white chocolate. Room temperature ingredients matter for best texture. For clean cuts, cool completely and wipe knife between slices. Blondies can be stored in an airtight container at room temperature for up to 3 days or refrigerated. Freeze undrizzled blondies for up to 3 months.
