Lighter Warm Bacon and Beer Cheese Dip Recipe (Easy Bite)

A lighter version of the classic warm bacon and beer cheese dip, creamy and rich with smoky bacon and tangy cheddar, perfect for game day or cozy nights in.

Ingredients

  • 4 slices thick-cut bacon
  • 8 ounces reduced-fat cream cheese, softened
  • 6 ounces sharp cheddar cheese, freshly shredded
  • 1/2 cup beer (light lager or pale ale), at room temperature and flat
  • 1/4 cup skim milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • Soft pretzels for serving

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with foil and place a wire rack on top. Lay bacon slices on the rack without overlapping. Bake for 15-18 minutes until deep golden brown and crispy. Let cool on rack for 5 minutes, then crumble into small pieces. Set aside.
  2. While bacon cooks, let cream cheese come to room temperature.
  3. Shred cheddar cheese (about 1 1/2 cups loosely packed).
  4. Pour beer into a measuring cup and let sit for 10 minutes to go flat and come to room temperature.
  5. In a medium saucepan over low heat, add softened cream cheese and skim milk. Whisk constantly until cream cheese melts into milk, about 2-3 minutes.
  6. Add shredded cheddar cheese a handful at a time, whisking after each addition until fully melted, about 4-5 minutes total.
  7. Pour in flat, room-temperature beer while whisking continuously. Add Dijon mustard, Worcestershire sauce, garlic powder, and onion powder. Whisk until smooth and glossy. Season with a pinch of salt and black pepper to taste.
  8. Remove saucepan from heat and let dip rest for 2 minutes to thicken.
  9. Transfer dip to a serving bowl and sprinkle crumbled bacon evenly on top. Serve immediately with warm soft pretzels.

Notes

Shred your own cheese for best melting. Use flat, room-temperature beer to prevent cheese from seizing. Go easy on salt as bacon and cheese are already salty. For a party, keep warm in a small slow cooker on warm setting.
