This Oktoberfest Sheet Pan Sausage and Peppers is a quick and easy one-pan dinner that brings the flavors of a Munich street festival to your kitchen. Juicy sausages, caramelized peppers and onions, and a tangy mustard kick come together in about 40 minutes with minimal cleanup.

  • 68 sausages (bratwurst, Italian sausage, or kielbasa, about 1.5 pounds total)
  • 3 bell peppers (mix of red, yellow, and orange), sliced into 1/2-inch strips
  • 2 large yellow onions, sliced into half-moons, about 1/4-inch thick
  • 4 cloves garlic, minced or thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon whole grain mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon caraway seeds (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For serving (optional): crusty bread or pretzel rolls, chopped fresh parsley, extra whole grain mustard, German beer

Instructions

  1. Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper or foil.
  2. In a large mixing bowl, combine sliced peppers, onions, and garlic. Drizzle with olive oil, then add mustard, smoked paprika, caraway seeds (if using), salt, and pepper. Toss until evenly coated.
  3. Spread the seasoned vegetables in an even layer on the prepared sheet pan. Nestle the sausages into the vegetables, leaving about an inch of space between each.
  4. Roast for 20 minutes. Remove from oven, flip sausages with tongs, and stir vegetables. Return to oven and roast for another 15-20 minutes, until sausages are browned and cooked through (internal temperature of 160°F/71°C for pork) and vegetables are caramelized.
  5. Let rest for 5 minutes. Sprinkle with parsley if desired. Serve directly from the sheet pan with crusty bread and mustard.

Notes

Don’t overcrowd the pan to ensure caramelization. Use a meat thermometer for perfect sausages. For extra char, broil for the last 2 minutes. Leftovers keep in the fridge for up to 4 days and freeze for up to 3 months.
