  • 1 cup (240ml) whole milk
  • 2 teaspoons (10ml) vanilla extract
  • 1/2 teaspoon (2.5ml) butter extract
  • 1/8 teaspoon salt
  • 1/4 teaspoon (1.25ml) almond extract (optional)

Instructions

  1. Pour the milk into a small saucepan and add the granulated sugar. Whisk together briefly to start dissolving the sugar in the cold milk.
  2. Place the saucepan over medium heat. Whisk constantly as the milk warms up until small bubbles form around the edges (about 3-4 minutes). Do not let it come to a full boil.
  3. Continue whisking until the sugar is completely dissolved. The mixture will go from cloudy to slightly translucent. Test by dipping a clean spoon—if you feel sugar crystals, keep whisking for another minute.
  4. Remove the saucepan from heat immediately. Whisk in the vanilla extract, butter extract, salt, and almond extract (if using).
  5. Let the syrup sit in the saucepan for 2-3 minutes to cool slightly and thicken.
  6. If you see any lumps or a milk film, pour the syrup through a fine-mesh strainer into a glass jar.
  7. Pour the syrup into a jar and let it cool completely before sealing. Use immediately by stirring 2-3 tablespoons into hot coffee, or store in the refrigerator.

Don’t let the milk boil—it can cause separation. Use a heavy-bottomed saucepan to prevent scorching. The syrup keeps for up to two weeks in the refrigerator.
